Texas Producer Bets Big on “Mama Bear” Shelf Stable Kombucha

Dear Client: The last couple of years, some of the largest craft brewers -- from Boston Beer, with its Tura test offering, to Sierra Nevada, with its unpasteurized Strainge Beast brew, which is just now rolling -- have bet on kombucha as the next big thing.  As we reported back in January, the current hard kombucha market leader, Boochcraft, estimates that space could become a $200 million to $300 million category in the next five years.
